ELSA owners can do whatever they want... but.....

If the plane is registered in the E-LSA category, by definition, it can not be modified in a way that takes it out of the LSA limitations, otherwise its airworthiness is invalid. For other experimental types (amateur built, exhibition, etc), the plane can legally be modified so it no longer meets the definition of an LSA, but once you cross that line, it can never be turned back into an LSA, and of course, can not be flown by a sport pilot again.
