The exemption was for instructors, so unless you were an instructor you couldn't legally fly under the exemption.
And pretending to be an "instructor under training" with an endorsement from a UL instructer wasn't legal either, although a lot of us did it back in the old days. In fact, that was the main reason that the FAA gave for not renewing the exemption: too much "abuse".
BUT... if you WERE flying illegally under the exemption then nothing has changed: you still fly illegally now! The trike won't know the difference ;)

Well.... if you refuse to fly somebody else's trike, and you won't put dual controls on your own trike, and you can't get a medical to fly as a private pilot, then it looks like you are stuck with continuing to fly illegally, or not at all.
Unless you want to go with the diet and exercise routine, but I find that one to be more difficult than the other options ;)
