Hello Alan,
Congratulations on not giving up on a life-long dream to fly. I became interested in LSAs after flying standard certfied aircraft for many years. The new designs I was seeing were a breath of fresh air and didn't disappoint performance wise as well. The retro movement is like-wise just as cool.
My best advice for you would be to find all of the LSA flight schools in the area (S. CA should have a lot) and fly with all of them by taking Intro or Discovery Flights. Unfortunately you might not be able to find the exact aircraft you want to train in but they are all applicable for the most part. Don't forget to take a logbook (available online) and ask each instructor log your flight, this is valuable time. This will be a great way to find the instructor that fits you best because you will be spending a lot of time with him or her.
