You can do all of those things WITHOUT a medical so long as you do them in an LSA.  It's only the checkride that requires a medical. The safety pilot or CFI also must have a medical while you do hoodwork even in an LSA.

I may be wrong but, as I interpret the regs.....you need a third class medical to take private pilot checkride....and if you ever fail (or are denied 3rd class medical for any reason) you are done legally piloting, even as sport pilot. I think Helen Woods can clarify the regs about this....
