Your CFI may instruct you in any aircraft he wants. You may only solo in an LSA though without a 3rd class medical. (Thats what you want anyway.)
So you get your dual time in a 172 or whatever he has. You solo in his LSA, (Be careful it has the equipment you wnat to be certified on, ie: Ercoupe with 2 axis controls, you will only be able to fly that type. Was a deal breaker for my CFI).
It is POSSIBLE to take your checkride with the DPE on the ground, (if the lsa had only one seat, over wieght, etc,) but again, you may have restrictions on your certificate.
Lucky for us all, you have MANY options.
I am looking into the Just Aircraft Excapade right now. Has plenty room, (read useful load), dual side by side stick controls, converts from tractor gear/taildragger/floats, room for full IFR instruments, relatively inexpensive. (vs. Skycatcher etc.)
Remeber that any time in a single engine airplane counts toward any other endorsements on your ticket. Make sure the plane you have meets the criteria.
If you really want to build a plane, buying first will be an investment in your certificate as opposed to renting, which is money well spent, but never recouped...
