Hi Joseph,
Though I'm not your size or weight (just the opposite) I can related in that I, too, always wanted to fly, and only now at the age of 70 am finally happily flying and owning a light sport aircraft.
My Skyranger has an ability to carry a useful load of about 600 pounds total fuel pilot + passenger.
Theoretically you could fly in it with a 170 pound instructor and have a bit of slack on max take off weight.
Problem is (A ) that's pushing the edge of it's limits. Not a good idea at all really as performance would be minimal and stress on plane at landing and in turbulance maximal and (B ) at your size I truly doubt we could shoehorn you, let alone you and small 160 pound instructor into the seats.
At one point I (being thin and light) found it pretty tight in the cockpit the one time I flew with a 260 pound instructor.
Oh, and I just remembered this additional show stopper: Our POH says not to put more than 265 pounds in either seat.
You COULD bite the bullet and go for private pilot.
Lots of other aircraft – some good used ones costing less than many light sport aircraft – that could carry your weight and have room too.
You didn't say what your budget is. That is a _strong_ determinate of what's available.
