I know generally pilots and rockets don't like to be in the same airspace, but if you are interested in what the view looks like from the "rocket's perspective" check out this video: http://www.youtube.com/watch?v=aI3hICLT_HI The Pueblo Weisbrod Aircraft Museum in Pueblo Colorado located on the grounds of the Pueblo Memorial Airport (PUB) offers as part of its Aerospace Education program monthly model rocket building and flying sessions in coordination with the Southern Colorado Rocketeers. Children fly small model rockets but also get to see the adults fly "high power" rockets. The Southern Colorado Rocketeers have an FAA Waiver to 8,000 feet Above Ground Level (AGL)/13,500 Mean Sea Level (MSL). Lookouts are positioned to watch out for aircraft. Check your NOTAMs for "unmanned rocket flights". Location is 20 NM on the 231 deg radial from the PUB VORTAC from 10 AM-2 PM local on the FIRST and THIRD Saturdays of the month.
