Hi Mike,
No 2-axis auto-pilot is correct. The auto-pilot servos are hooked up to ailerons (flaperons in this case) and elevator. The auto-pilot rate of turn is set to be mild enough that no rudder input would be necessary at all while using auto-pilot.
SALSA does both airplane and glider training and I believe they have both types of aircraft there.
